Chocolate Cherry Cordial Muffins

2 c unbleached flour
1/4 c granulated sugar
1/4 c brown sugar -- packed
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 c reduced fat chocolate chips
1/2 c candied cherries -- chopped
3/4 c skim milk
3 tbsp olive oil
1 whole egg -- slightly beaten

Preheat oven to 400�F. Prepare 12-2 1/2" muffin cups with cooking spray and flour; set aside.

In a mixing bowl, combine flour, sugars, baking powder, baking soda, salt, chocolate chips, cherries, milk, oil, and egg. Mix until moistened. Spoon into prepared cups.

Bake for 18 minutes, or until golden brown.
