Cinnamon Muffins
1/2 cup packed brown sugar
1/4 cup margarine
1 egg
3/4 cup DOLE� Pineapple Juice
1 tsp. grated orange peel
2 cups all-purpose flour
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1/2 tsp. vanilla extract
1/4 tsp. ground nutmeg
1 cup DOLE CinnaRaisins
Beat sugar and margarine until light and fluffy. Beat in egg, pineapple juice
and orange peel. Combine remaining ingredients; stir into juice mixture just
until moistened.
Spoon batter into muffin cups coated with vegetable cooking spray.
Bake at 375�F. , 15 minutes or until toothpick inserted comes out clean. Cool on
wire rack; serve warm.
