German Apple Muffins

2 eggs
1 1/4 cup sugar
3/4 cup vegetable oil
1 teaspoon vanilla extract
3/4 cup chopped walnuts
2 large Granny Smith apples, thinly sliced
2 cups flour
1 teaspoon each: cinnamon, baking soda

1. Heat oven to 350 degrees. Combine eggs, sugar, oil and vanilla in medium bowl. Place walnuts and apples in another medium bowl. Sift together flour, cinnamon and baking soda over apples and walnuts; toss to coat. Add egg mixture to flour mixture; stir until just combined.

2. Fill batter into paper cup-lined muffin pans about 3/4 full. Bake until golden brown and springy to touch, about 25 minutes.

Yield: 15 muffins
