Key Lime Muffins

1/4 cup butter, softened
1/2 cup sugar
2 eggs
1/4 cup lime juice
1 1/2 teaspoons lime zest
1 teaspoon baking soda
1 container key lime or plain yogurt (8 ounce)
2 cups flour
1/8 teaspoon salt
For glaze: juice of 1 lime + sugar

Preheat oven to 375�F; spray muffin cups well with nonstick cooking spray.

Cream together well the butter and sugar. Add the eggs, one at a time, then mix in the juice and zest. Add baking soda to yogurt and set aside.

In separate bowl, mix the flour and salt, and then add to butter mixture. Add yogurt mixture; batter may be stiff, but don't overmix.

Spoon into muffin cups and bake for 18-20 minutes. While muffins are still warm, dip the tops in lime juice, then into sugar.

Makes 12 muffins.
