~ Lemony Orange Muffins ~
1 c sugar
2/3 c shortening
2 eggs
2 TBSP freshly squeezed lemon juice
3 c flour
3 tsp baking powder
1/2 tsp salt
1 tsp ground nutmeg
1 c milk
Orange Glaze (recipe)
Orange Butter (recipe)
In a large bowl, cream together sugar, shortening, eggs and lemon juice. Sift
together flour, baking powder, salt and nutmeg. Add to creamed mixture
alternately with milk. Stir with spoon. Do not over mix. Fill greased or
paper-lined muffin pans 1/2 to 2/3 full. Bake at 350 degrees for approx. 20-25
minutes. Brush muffins with Orange Glaze while still warm. Serve with Orange
Butter.
Yields 24.
Orange Glaze:
1 1/2 c powdered sugar
3 to 4 TBSP freshly squeezed orange juice
2 TBSP grated orange zest ( about 2 oranges)
Orange Butter:
3 TBSP powdered sugar
2 TBSP grated orange zest ( about 2 oranges)
12 c unsalted butter, softened
