Mandarin Orange Muffins

5 cups flour
2/3 cup sugar
1 teaspoon baking powder
2 teaspoons baking soda
2 teaspoons cinnamon
2 cans mandarin oranges, include juice (12 oz ea)
2 eggs + 2 egg whites
2 tablespoons oil
1 teaspoon orange zest
1/2 teaspoon orange extract

Preheat oven to 325�F; spray muffin cups with nonstick spray.

Mix together flour, sugar, baking powder, baking soda, cinnamon so all blended thoroughly.

In measuring pitcher, combine the mandarin oranges, eggs, egg white, oil, orange zest and orange extract. Pinch the pieces of orange apart, so there are no large clumps. Pour orange-egg mixture into flour mixture and mix til just moist. Do not overmix. Spoon batter into muffin cups and sprinkle about 1/4 tsp sugar on top of each.

Bake for about 20 minutes or till golden brown.

Makes 24 muffins.
