Weight Watchers Honey Bran
Muffins
1 1/4 cups flour
1 cup lowfat 1% milk
1 tablespoon baking powder
1/3 cup honey
1/4 teaspoon salt
1/4 cup oil
3 ounces bran flakes
1 egg -- lightly beaten
Preheat oven to 400�F. Line 12 muffin cups with paper liners. Mix
together flour, baking powder and salt in medium bowl. In another
bowl, combine remaining ingredients. Let stand until cereal softens,
2 - 3 minutes. Pour wet ingredients into dry and stir til just
moistened - do not overmix. Spoon into muffin cups, about 2/3 full.
Bake 18 - 20 minutes, until muffins are golden brown & toothpick
comes out clean. Cool on rack. Makes 12 servings. |
