Cottage Cheese Pancakes with Applesauce
3 eggs
1 c cottage cheese (small curd)
2 T oil
1/4 c flour
1/4 tsp salt
1 c applesauce
powdered sugar
cinnamon
sour cream
Break eggs into blender. Add cottage cheese and whirl until blended.
Add oil, flour and salt. Whirl until mixture is almost smooth.
Preheat a griddle or large frying pan over medium heat, grease lightly. Pour
batter, about 1/4 c for each pancake onto griddle. Cook until tops are bubbly
and appear dry; turn and cook other sides until browned.
While pancakes are cooking heat applesauce in a small pan. Spoon 1-2 T of warm
sauce down center of each pancake and roll to close. Sprinkle each with powdered
sugar and cinnamon.
Pass sour cream at table to be spooned on top.
