Honey Apple Pork Roast 

1 (3 lb.) lean, boneless pork loin roast
1 lg. onion, peeled & quartered
2 cups applesauce
1/2 cup cider vinegar
1 1/2 tsp. dried sage leaves
1 cup chicken broth
3 red cooking apples, cored & cut into 1/2-in. cubes
1/4 cup honey
1/4 tsp. nutmeg

Place a shallow roasting pan in oven, preheat to 350�F. Season roast with salt to taste.

Puree next 5 ingredients in blender or food processor. Place roast in hot pan and pour puree over. Cook 70 to 80 minutes, until an instant-read thermometer inserted into center of roast reads 155�F.

When roast is done, remove, place on platter and cover.

Add apple cubes, honey and nutmeg to sauce in roast pan. Stir thoroughly. Return pan to oven. Cook apples 5 to 10 minutes, until just tender.

Slice roast and top with apple mixture.

Serves 10.
