Honey Apple Pork Roast 

1 (3 lb.) lean, boneless pork loin roast
1 lg. onion, peeled & quartered
2 cups applesauce
1/2 cup cider vinegar
1 1/2 tsp. dried sage leaves
1 cup chicken broth
3 red cooking apples, cored & cut into 1/2-in. cubes
1/4 cup honey
1/4 tsp. nutmeg

Place a shallow roasting pan in oven, preheat to 350F. Season roast with salt to taste.

Puree next 5 ingredients in blender or food processor. Place roast in hot pan and pour puree over. Cook 70 to 80 minutes, until an instant-read thermometer inserted into center of roast reads 155F.

When roast is done, remove, place on platter and cover.

Add apple cubes, honey and nutmeg to sauce in roast pan. Stir thoroughly. Return pan to oven. Cook apples 5 to 10 minutes, until just tender.

Slice roast and top with apple mixture.

Serves 10.
