Chocolate Truffle Pudding Recipe

Chocolate Truffle Pudding

1 cup milk
1 cup whipping cream
1/2 cup sugar
3 tbsp. unsweetened cocoa
2 tbsp. cornstarch
3/4 cup semi-sweet real chocolate chips
1 egg, slightly beaten
2 egg yolks, slightly beaten
2 tbsp. butter or margarine
1 tsp. vanilla
Sweetened whipped cream
Unsweetened cocoa
Zest of orange peel (optional)

In 2-qt. saucepan stir together milk and whipping cream. Cook over medium heat until warm (3-5 min.).

In small bowl stir together sugar, 3 tbsp. cocoa and cornstarch. Gradually add to milk mixture.

Add remaining ingredients except whipped cream, cocoa and zest of orange peel. Continue cooking, stirring constantly, until pudding just begins to thicken (5-10 minutes, don't overcook).

Pour pudding into 6 or 8 (1/2 cup) individual dessert dishes. Cool 30 minutes. Cover; refrigerate at least 2 hours.

Pipe with sweetened whipped cream; sprinkle with cocoa and garnish with zest of orange peel, if desired.

NOTE: When combining the dry ingredients, I would recommend sifting the cocoa and cornstarch. Any lumps will probably remain in your pudding.
