Artichoke Torte
Great appetizer or serve as a vegetable dish
2 10-oz. pkg, frozen artichoke hearts
olive oil
fine dry bread crumbs
1 T. butter
1/2 cup chopped green onions
2 T. minced fresh parsley
1/2 t. oregano
3 eggs
3/4 cup grated Parmesan
3/4 cup milk
1/2 cup bread crumbs
salt and pepper
Cook artichokes and drain; chop into bite size pieces. Place in 8*
square pan that has been brushed with olive oil and sprinkled with
bread crumb. Heat 1 T. of olive oil and saut� green onions, parsley
and oregano. Set aside.
Combine eggs, cheese, bread crumbs and milk, season with salt and
pepper. Pour into onion mixture then pour over artichokes.
Bake at 375� F. for 25 minutes.
Cut into small squares and serve hot or cold as an appetizer or cut
into larger squares and serve as a vegetable side dish.
