Chicken Taco Filling
36 boneless, skinless chicken breasts
3 C. orange juice
3 C. lemon juice
3 C. lime juice
3 small onions, diced
24 cloves garlic, minced
2 T. Mexican dried oregano
2 T. achiote paste
salt and pepper
4 C. chicken broth
Combine all ingredients in a large bowl. Marinate chicken for 30
minutes.
Grill on a charcoal grill. Slice chicken breasts into strips. Keep
warm until ready to serve in a pan with the chicken broth.
