King Ranch Chicken Casserole

9 pounds of chicken

2 10 oz. can Rotell tomatoes

2 1/2 dozen tortillas

4 10 � oz. can cream of chicken soup

2 10 � oz. can cream of mushroom soup

2 10 � oz. can chicken broth

1 1/2 cups chopped onion

3 pounds grated cheese - American, Monterey Jack, or Cheddar

Boil chicken, bone and cut in small pieces. Saut� onion; add all ingredients except tortillas and cheese. Bring to boil.

Grease 2 9 x 13" casserole dishes, cover bottom of dish with 1/3 of torn tortillas, add 1/3 boiling mixture sprinkle with cheese. Repeat for next two layers.

Bake 1 hour at 300� F.

Serves 24
