Apple Crumb Bread

1 cup Butter or margerine, softened
1 cup Sugar
1 tsp. Baking soda
1 Tbsp. Lemon juice
2 large Eggs
2 tsp. Vanilla
2 cups Flour
1/4 tsp. Salt
1 1/2 cups Apples, cored, peeled & coarsely chopped

Crumb Mixture:
1 tsp. Cinnamon
2 Tbsp. Sugar
2 Tbsp. Flour
2 Tbsp. Butter or margarine, cold

Preheat oven to 375�F.

Make Crumb Mixture:
Mix crumb ingredients, cutting in butter to get a coarse crumb texture. Set aside.

In small bowl:
Dissolve baking soda in lemon juice. Mix in eggs and vanilla.

In large bowl:
Cream butter and sugar together. Beat butter mixture and egg mixture together. Add flour and salt. Mix to combine. DO NOT OVERMIX.

Gently fold in apples.

Spoon 1/2 of batter into large (9x5-in.) loaf pan. Sprinkle with 1/2 crumb mixture. Spoon in remaining batter and sprinkle with remaining crumb mixture. Press crumbs gently into surface of batter.

Bake for 1 hour 15 minutes OR until a cake tester inserted in the center comes out clean. Cool slightly in pan.

Remove bread from pan and cool completely on cooling rack.

***Note: I have made this also in an angel food pan and layered the ingredients starting with 1/2 the Crumb Mixture, 1/2 the batter, then the rest of the crumb mixture and ending with the batter.I think it makes a prettier presentation.
