Orange Sour-Cream Loaf
1 stick unsalted butter -- room temperature
1 cup granulated sugar
2 large eggs
1 tbsp. freshly grated orange peel
2 cups flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 cup reduced-fat or regular sour cream
Beat the butter and sugar with electric mixer on high speed for 5-7 minutes,
until pale and fluffy. Scrape the sides of the bowl. Add eggs one at a time,
beating after each. Add orange peel. Put flour, baking powder, baking soda, and
salt into a bowl. Stir to mix. With mixer on low, add 1/2 cup of flour mixture.
Without waiting for it to mix, add 1/3 of the sour cream. Continue alternating
flour and sour cream in the same way until ending with flour. Mix only until
well blended.
Spread batter in greased 9x5x3 pan. Bake at 350 degrees until pick inserted in
center comes out clean, approximately 55 minutes. Cool.
HINT:
For a variation, make several smaller loaves or muffins.
