Rhubarb Bread 2-1/2 c. flour
1 tsp. baking soda
3/4 teas. salt
1-1/2 c. brown sugar (Light)
2/3 cup margarine
1 egg
1 c. buttermilk
1 tsp. vanilla
1-1/2 c. diced rhubarb
1/2 c. chopped nuts
(Mix 1/2 cup sugar and 2 Tablespoons margarine together and put aside to use as
sugar mixture)
Cream brown sugar and margarine. Add egg and beat well. Add dry ingredients that
have been sifted together.
Gradually add buttermilk beating until smooth. Add vanilla, rhubarb and nuts.
Stir lightly.
Pour into 2 loaf pans or a 9" tube pan. Sprinkle sugar mixture on top and bake
at 375 degrees for 50-60 minutes.
Cool 10 minutes and turn out on a rack to cool. |
