Southern Sweet Potato Bread
1-1/2 cups self-rising flour
1 teaspoon nutmeg
1/2 teaspoon cinnamon
1 cup sugar
2 eggs, lightly beaten
1/2 cup vegetable oil
2 Tablespoons milk
1 cup mashed sweet potato
1 cup chopped pecans
1/2 cup golden raisins
Heat oven to 325�F. Grease bottom only of loaf pan.
In a large bowl, stir together flour and spices. Stir in eggs, sugar, oil, and
milk. Stir in sweet potato, pecans, and raisins. Pour into prepared pan.
Bake in preheated oven for 1 hour and 10 minutes or until done.
Cool in pan for 15 minutes, then remove and cool on rack. |
