Whole Wheat Nut Quick Bread
Shortening and flour or baking spray for greasing pan
2 cups whole wheat flour
1/4 cup bran flakes
1/4 cup wheat germ
2 teaspoons ground allspice
2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon ground cloves
1/2 cup apple juice or cider
1/2 cup applesauce, see note
1/2 cup plain or vanilla yogurt
1/3 cup honey
1/3 cup vegetable oil
2 eggs
1 cup chopped walnuts
Preheat oven to 350 degrees. Grease and flour a 9-by-5-inch loaf pan or spray
with baking spray.
In a large bowl, combine the flour, bran flakes, wheat germ, allspice, baking
powder, baking soda and cloves. Make a well in the center.
In a medium bowl, mix together the apple juice, applesauce, yogurt, honey, oil
and eggs. Beat well and pour into the center of the dry ingredients. Stir to
combine without overmixing. Fold in the walnuts.
Spoon the batter into the prepared pan.
Bake 50-55 minutes, or until a wooden skewer inserted into the center comes out
clean. Remove from the oven and let cool in the pan for 10 minutes, then invert
onto a wire rack and cool completely before cutting.
Makes about 18 slices.
Cook's note: Applesauce is incredibly easy to make. Place 8 medium apples,
peeled, cored, cut into chunks or cubes and 1 cup cider or water in a large
saucepan. Cook over medium heat until apples are very tender and break up. Taste
and, if desired, add spices such as cinnamon and nutmeg and sugar. |
