Quick, Easy -N- Fast Fish Almandine
4 fillets of firm white fish
2 T. butter, divided
1/4 C. sliced almonds
1 t. grated lemon zest
2 t. fresh lemon juice
Melt 1 tablespoon butter in a large skillet over medium-high heat. Add fish.
Cook for 3 to 4 minutes per side. (Do in batches if necessary to keep from
crowding pan.) Remove to a serving platter and cover with foil to keep warm.
Reduce heat to medium. Add 1 tablespoon butter to skillet. Add almonds and fry,
stirring frequently, until lightly brown. Add lemon zest and juice. Cook 1
minute. Pour over fish and serve.
