Fried Red Snapper
2 lbs. Red Snapper
3/4 c fine bread crumbs
3 T parmesan cheese
1/2 t Salt
1/4 t ea. - pepper, paprika
1 egg, beaten
1 T milk
1 T butter or olive oil for frying
3 T butter
2 green peppers, sliced
1 onion, thinly sliced
Mix bread crumbs, cheese and seasonings. Dip fish first in egg and
milk mixture, then into bread mixture.
Heat butter in skillet. Fry fish for approximately 8 minutes or
until done, turning once.
Clean skillet. Melt the 3 tbsps. of butter adding the green peppers
and onions. Saut�, stirring for 4-5 minutes or until vegetables are
cooked. Spread over fried fish.
Tartar Sauce:
In small bowl, blend together 1 cup mayonnaise, 1 T lemon juice, 2 T
prepared mustard, 1 T relish and green onions. Salt to taste. |
