Quick, Easy -N- Fast Salad of Gold Recipe

One 3-ounce package lemon- flavored gelatin
2/3 C. boiling water
2/3 C. syrup from pineapple
2/3 C. evaporated milk
2 T. vinegar
Two 3 oz. packages cream cheese
1 C. carrot pieces
2/3 C. crushed pineapple, drained

Put gelatin and water in blender and dissolve. Add syrup, milk, vinegar and cream cheese. Process until smooth. Add carrots and pineapple. Process on grind. Pour into a 2-quart mold and chill. Serves six to eight.
