Quick, Easy -N- Fast Scallion Hash Browns
1 lb. red bliss, or new, potatoes
1 red bell pepper, diced
1 very small red onion, peeled and diced
1 bunch scallions, diced
3 T. balsamic vinegar
salt and pepper to taste
2 T. butter, for saut�ing
Boil potatoes until tender. Cool in cold water, drain and quarter. Combine all
the ingredients. Serve at room temperature or, to serve hot, saut� the potato
mixture in the butter.
Makes 4 servings.
