Quick, Easy -N- Fast Smashed Potatoes
6 to 7 small Yukon gold potatoes
1 large shallot, unpeeled
2 T. milk
1 T. butter
salt, pepper
Dice unpeeled potatoes and cook potatoes and shallot in salted water to cover
until tender, about 30 minutes. Drain well. Add milk, butter and salt and pepper
and coarsely mash together.
