Quick, Easy -N- Fast Lemon Chicken Cutlets Recipe
2 lb. boneless chicken cutlets
1/4 C. olive oil or butter, melted
1/2 C. flour
2 T. lemon juice
2 T. parsley chopped
14.5 oz. can chicken broth
Flatten chicken cutlets. Place olive oil and flour in separate bowls. Dip
chicken cutlets in oil or melted butter, then in flour. Place in 13 x 9-inch
oblong dish. Squeeze lemon juice over chicken cutlets. Top with parsley. Pour
chicken broth over chicken. Bake in 350�F. oven for about 45 minutes.
Makes 4 - 6 servings.
