Quick, Easy -N- Fast Orange Rice Recipe

1 t. virgin olive oil
2 cloves garlic, chopped
1 t. fresh thyme
1/2 t. salt
1 C. jasmine rice
1 orange, juiced, peel grated

Heat oil, garlic, thyme, salt and rice in a saucepan over medium-high heat. Cook, stirring, until rice turns pale golden (3-5 minutes). Add water to orange juice to make 2 cups and add to rice, stirring in 1 teaspoon rind.

Bring to a boil, cover and reduce heat and cook over low heat until fluffy (about 20 minutes).
