Quick, Easy -N- Fast Sweet Onion Salad With Orange Vinaigrette Recipe

1 large head Boston lettuce, torn
2 C. fresh spinach, torn
3 large navel oranges
1 sweet onion, peeled (divided use)
3 red apples, cored, diced
2 T. sesame seeds, toasted
Vinaigrette (recipe follows)
4 rounds pita bread, toasted, cut into wedges

Put torn greens into large salad bowl. Peel oranges over a medium bowl to catch juices and cut along sections. Reserve juice for vinaigrette. Add sections to bowl.

Mince 1/4 cup onion and reserve for vinaigrette. Cut remaining onion into thin slices. Add onion and apple to salad. Garnish with sesame seeds.

Toss well with vinaigrette and serve with toasted pita wedges.

Makes 6 servings.

Vinaigrette:
In a bowl, whisk together 3 tablespoons orange juice, minced onion, 2 tablespoons white wine vinegar, 2 teaspoons Dijon-style mustard and 2 teaspoons honey. Gradually whisk in 1/3 cup oil until well blended. Makes 3/4 cup.
