Quick, Easy -N- Fast Easy Fruit Cobbler Recipe

1 1/2 C. sugar, divided
1 C. water
1 t. lemon juice
1 quart fresh blueberries or other fruit
1 1/2 C. self-rising flour
1/2 C. butter, softened

Preheat oven to 350�F. Combine 1 cup sugar, water and lemon juice in a large bowl, stirring until sugar dissolves. Add fruit, stirring until well blended. Pour into a lightly greased 13 x 9 inch baking dish.

Combine flour and remaining 1/2 cup sugar in a bowl; cut in butter with a pastry blender until mixture is crumbly. Spoon over fruit. Bake for 30 to 40 minutes until the top is brown and fruit is bubbly.

Serve with fresh whipped cream or vanilla ice cream, if desired.

Makes 8 to 10 servings.
