Quick, Easy -N- Fast Simple Ratatouille Recipe

1 (1 lb.) eggplant, stemmed and cubed
1 C. chopped onion
2 cloves garlic, minced
1 t. dried basil leaves or 1 T. chopped fresh basil
2 medium zucchini, sliced 1/4-inch thick
2 green bell peppers, cut into strips
2 medium tomatoes, coarsely chopped
1/4 C. sliced black olives (optional)
2 T. olive oil
1/4 t. each salt and pepper (or to taste)

Put eggplant, onion, garlic and basil into a 3-quart casserole. Cover and microwave on high 6 minutes. Add zucchini and bell peppers; re-cover and microwave on high 4 minutes. Add tomatoes; re-cover and microwave on high 4 minutes.

Drain vegetables; add olives and olive oil. Sprinkle with salt and pepper; toss gently. Serve warm or cold.
