Baked German Potato Salad Add vegetable oil to make up difference if necessary. Add celery and onion. Cook over medium heat 3 minutes. Add flour, salt and pepper. Cook for 2 minutes longer. Then add sugar, vinegar and water all at once, stirring with a whisk. Bring to a boil and cook one minute. Add the parsley, celery seed and reserved bacon. Combine and remove from heat. Heat oven to 375*F. Place potatoes in an oiled 13X8X2 pan. Pour dressing over. Mix gently so as not to break potatoes. Bake for 45 minutes until middle of casserole bubbles. Serves 10 - 12. |
