Better Than Potato Salad 4 cups rice

8 radishes sliced
4 hard cooked eggs chopped
1 med. cucumber seeded and chopped
2 cups thinly sliced celery
1/2 cup chopped onion
1 1/2 cups mayonnaise
3 tbsp prepared mustard
3/4 tsp salt
In a large bowl, combine rice, radishes, eggs, cucumber, celery and onion.
Combine mayo, mustard and salt, mix well. Pour over rice mixture and toss.
Cover and refrigerate at least 1 hour.
