Black Bean Orzo Salad
1 (15-oz) can of black beans, drained and rinsed
1 (15-oz) can of sweet corn, drained and rinsed (can use one cup of frozen corn
instead)
2 medium tomatoes, seeded and chopped
2 green onions, sliced thin
1 red bell pepper chopped (or cut this in half and use both red & yellow peppers
for color)
1/2 cup cooked, rinsed & drained orzo
2 cloves minced garlic
juice of 1 lime and the zest of the lime
Olive Oil
Salt & Pepper to taste
Mix it all together and let it refrigerate until flavors blend.
Add more oil or juice as needed. Be careful not to use too much zest. |
