Fiesta Bean Salad
2 T. salad oil
5 T. cider vinegar
4 T. dark molasses
1 1/2 t. salt
1/8 t. pepper
1 t. Worcestershire sauce
1/8 t. hot pepper sauce
1 clove garlic, crushed
1/2 t. dry mustard
1 (16 oz.) can garbanzo beans, drained
1 (16 oz.) can kidney beans, drained
1 (16 oz.) can cut green beans, drained
1/2 c. diced green pepper
1/2 c. thinly sliced scallions or green onions
In large bowl, combine oil, vinegar, molasses, salt, pepper, Worcestershire
sauce, hot pepper sauce, dry mustard and crushed
garlic. Add garbanzo, kidney and green beans, green pepper and
scallions. Mix well. Cover and chill at least 2 hours. Stir occasionally.
Yields 6 to 8 servings. |
