Island Chicken Salad 1/2 c
mayonnaise
1/2 c sour cream
1/4 tsp ginger
1/2 tsp curry powder
salt and pepper to taste
3 1/2 c cooked diced chicken
2 c pineapple chunks, drained
1/2-3/4 c macadamia nuts or slivered almonds
Mix mayonnaise, sour cream, curry, ginger, salt and pepper. Set aside 15-20
minutes.
Combine chicken, pineapple and nuts. Add to mayonnaise mixture and serve on bed
of shredded lettuce. |
