Italian Seafood Salad
1 pound cooked squid, cleaned and thoroughly, pouches cut into rings, triangular
fins sliced into strips, and tentacles left whole.
1 pound shrimp, cooked, peeled and deveined
1 onion, chopped
4 Tbsp. capers
2 large stalks celery, halved lengthwise and chopped
4 cups shredded lettuce
1 red onion, thinly sliced
lemon wedges
Marinade:
1-1/2 Tbsp. virgin olive oil
1 onion, chopped
4 garlic cloves, crushed
juice of one lemon
4 Tbsp. chopped parsley
pepper for taste
Put the squid, shrimp, onion, capers and celery into a large bowl, add the
marinade
Cover the mixture and place in the refrigerator to marinade at lease 2 hours or
more.
Just before serving, mix 2 cups shredded lettuce into the seafood. Serve on a
bed of shredded lettuce, garnish with a few red onion rings and lemon wedges. |
