Raspberry Sour Cream Salad
2 (3 oz.) pkgs. raspberry gelatin
3 cups boiling water
1 carton fresh or 1 (10 oz.) pkg frozen raspberries
1 Tblsp. lemon juice (optional)
2 cups applesauce
2 cups sour cream
2 cups miniature marshmallows
Dissolve gelatin in boiling water in a bowl. Stir in raspberries. Let stand
until cool.
Add lemon juice; mix well. Stir in applesauce
Spoon into a 9 x 13 inch pan Chill until set.
Meanwhile, combine sour cream & marshmallows in mixer bowl; mix well. Chill for
3 hours. Beat well. Spread over gelatin
Serve over lettuce leaves on serving plates.
