Ruby Salad 1 pkg raspberry flavored
gelatin
1 Cup boiling water
1/2 Cup port or dry red wine
1 T lemon juice
1 can (l lb) whole cranberry sauce
1 tsp grated orange peel
1 Cup halved seeded red grapes
salad greens
mayonnaise or sour cream
Add gelatin to boiling water and stir until dissolved. Add wine and juice; stir
till blended. Chill until partly set.
Add cranberry sauce, peel and grapes; mix until blended. Turn into a 1 qt. mold
or into 4-6 individual molds. Chill until firmly jelled.
Unmold on salad greens. Pass Mayonnaise or sour cream as a dressing
Note: if you do not want to use wine, increase the boiling water to 1 1/3 c and
the lemon juice to 3 Tbsp. |
