Sweet Potato Salad 3 lbs sweet
potatoes, peeled and cut into 1/2" cubes
1/4 T salt
1 1/2 c sour cream
2/3 c mayo
2 T chopped crystallized ginger
2 t grated orange peel
1 20-oz. can pineapple tidbits, or crushed
4 stalks celery, chopped
1 c walnut halves
1 c raisins
Steam potatoes until just done. Drain and cool.
Mix together sour cream, mayo, ginger orange peel and salt. Beat until creamy.
In a large bowl, carefully fold together potatoes, pineapple, celery, walnuts an
raisins. Add the mayo mixture, tossing carefully. Cover and chill for 12 to 24
hours. |
