Tuna Pasta Salad
Mix the dressing first so it can be mixed with the pasta while pasta is still
hot. It will absorb more flavor as it cools.
12 oz. tri-color pasta
Dressing:
2/3 cup extra virgin olive oil
2 Tblsp. white vinegar
2 Tblsp. tomato ketchup
1 tsp. paprika
1/4 tsp. cayenne pepper
Salad:
7 oz. can tuna, drained
1 bunch scallions
2 Tblsp. chopped dill
Cook pasta in boiling salted water for 10 minutes or until 'al dente'. Drain &
place in a large bowl.
Blend dressing ingredients together & toss with the pasta.
Stir in tuna, onions, and dill and transfer to a container with a lid. Cover &
chill thoroughly. |
