"Hollywood" (or Popcorn) Shrimp
12 very large shrimp, peeled and de-veined
1/2 teaspoon sea salt
1/2 tablespoon cracked black pepper
1/2 teaspoon cayenne pepper
2 eggs, beaten
2 tablespoons water
1/4 cup flour
12 ounces of popped white popcorn
Canola oil
Mix together the sea salt, pepper and cayenne, and season the shrimp with the
mixture.
In a blender, food processor or electric coffee grinder, chop the popcorn until
it becomes a coarse powder. Place in a bowl and set aside.
In a bowl, mix together the eggs and water to make an egg wash. Dredge the
shrimp in the flour and shake off the excess. Dip the shrimp into the egg wash,
then press into the popcorn, turning over to coat both sides. Set aside on a
large platter, layering the shrimp with wax paper so they don't stick together.
In a pan on the stove, heat the Canola oil (enough to cover the bottom of the
pan) to 350�, and deep fry the shrimp until thoroughly done, about 1 minute.
Using tongs, transfer the shrimp to paper towels to drain, then arrange on a
platter.
