Cajun Chicken Vegetable Soup
1 package boneless skinless chicken breasts
2 qts. of water
1 onion chopped
1 16oz. can of stewed tomatoes
2 ribs of celery - chopped
2 large carrots - diced
1 11oz. can crisp corn - drained
1/3 cup of barley
1/4 cup of uncooked white rice - opt.
1 tsp. salt
1 tsp. pepper
1 can of chicken broth
2 tbs. Creole seasoning
1 tsp. butter
Add all ingredients and simmer covered for about two hours. Adjust seasonings to
taste. If soup gets too thick add more chicken broth or tomato juice. When soup
is done, remove chicken and dice or shred and return to soup.
