Minestrone Soup
1/2 c. chopped onion
1/2 c. chopped celery
1 clove garlic, minced
3 c. beef broth
1 16 ounce can diced tomatoes, undrained
1 14 1/2 ounce can crushed tomatoes, undrained
2 T. snipped parsley
2 t. dried basil
1 t. dried oregano
1/2 t. salt
1/4 t. pepper
1 bay leaf
2 c. fresh veggies (cubed potatoes, broccoli, carrots)
1 can red kidney beans-rinsed
1/2 c. uncooked spaghetti (broken into pieces)
1/4 c. grated parmesan cheese
In a large pan, add all ingredients up to veggies. Bring to a boil, reduce heat,
cover & simmer 30 min. Add fresh veggies & kidney beans, simmer, covered until
veggies are tender. Add broken spaghetti, cook about 15 more min. Remove bay
leaf. Sprinkle cheese on soup in bowls.
I usually triple this recipe. It is really really good! I add more beef broth
than called for. Enjoy
