White Chicken Chili

1 large sweet onion, finely chopped
Generous shake of garlic powder or 2 cloves garlic, minced
2 T. vegetable oil
2 cans chicken broth
2 cans white beans (either navy or great northern beans), drained
1 can green chilies
1/2 tsp. cumin
1/2 tsp. salt
1/2 tsp. white pepper
6 oz. pepper jack cheese, shredded or in small cubes
1 lb. chicken breasts, cooked and cubed (about 1/2")
1 c. heavy cream
3 T. flour mixed with 1/4 c. softened butter (optional)

Saute the onion in the vegetable oil until translucent.

Add garlic powder, broth, beans, chilies and seasonings.

Let simmer for 20 minutes over medium heat. Stir in cheese and chicken and stir until cheese melts.

Add heavy cream and bring just to a boil Since I don't like soupy soup, I added the flour mixed with butter just as the soup was coming to a boil.
