Cherry Tarts Recipe


Cherry Tarts

3/4-cup sugar

2-tbsp cornstarch

1/2-tsp salt

3-tbsp orange juice

1-tbsp lemon juice

1-cup unsweetened cherry juice

2-tbsp butter

1-tsp grated orange rind

4-cups red tart unsweetened cherries

9-tart shells

Mix sugar, cornstarch, salt and fruit juices. Cook over direct heat for 5 minutes or until thickened and clear. Remove from heat; add butter, orange rind and cherries. Cool.

Put into tart shells. Serve plain or with ice cream or whipped cream.

Yield: 9 servings.
