Apple Raisin Stuffing

1/3 cup minced onion
3/4 cup chopped celery
1/4 cup oil
4 cups soft bread cubes
1 1/2 cups chopped apple
1/3 cup raisins
1 cup vegetable broth
salt and pepper to taste

In large skillet, heat oil then add onion and celery.

Cook until tender about 5 to 7 minutes. Pour into a casserole and add bread cubes.

Add remaining ingredients and toss making sure all the bread in soaked in broth.

Bake in oven about 45 minutes at 350F. Serves 6 to 8.
