Spinach Pies While dough is rising prepare spinach mixture. Boil or defrost spinach; squeeze out excess water. Saute onion in olive oil until tender, add spinach, lemon juice, sumac, pepper and salt, mix well. After dough has risen 1 hour, divide in half and then each half into 10 sections. Let rise for 30 minutes covered. Roll out each section and add filling, then fold into triangles. Let rise for 30 minutes after filled. Bake at 400F for 15 minutes. Serves several. |
