Coconut Pecan Waffles with Honey Butter Sauce
Waffles
1-1/2 cups Pioneer Biscuit
& Baking Mix
1 cup quick oats
1/2 cup flaked coconut
1/2 cup chopped pecans
1-1/2 cups milk
1/4 cup vegetable oil
2 eggs, slightly beaten
1 teaspoon "Adams Best" Vanilla
1 teaspoon Adams Coconut Flavor
1 teaspoon Adams Butter Flavor
Toasted pecans for garnish
Honey Butter Sauce
1/2 cup butter or margarine
1 cup Burleson's Honey
1/2 cup whipping cream
2 teaspoons "Adams Best" Vanilla *
Preheat waffle iron. In medium bowl, combine biscuit mix, oats, coconut, and
chopped pecans. In small bowl, combine milk, oil, eggs, and flavorings; beat
with wire whisk until well blended. Stir into dry ingredients. Bake in oiled
waffle iron according to manufacturer's directions.
Serve warm with Honey Butter Sauce. Garnish with toasted
pecans.
To make sauce: Melt butter or margarine, stir in Burleson's
Honey and whipping cream. Microwave on high for 1 minute; stir in vanilla. Serve
warm over waffles, ice cream, or other desserts.
* You can substitute Adams Rum Extract to make a Honey Butter
Rum Sauce.
Makes 6-8 waffles; use heart-shaped iron for a Bridal Brunch
