Herman� Waffles 

2 C flour
1 1/2 t baking powder
1/2 t baking soda
1/4 t salt
3 eggs, separated
1 C �Herman�
1 C milk
1/4 C vegetable oil
3/4 t vanilla

Stir together flour, baking powder, baking soda and salt. Beat egg yolks well.

Add to �Herman�. Add milk, oil and vanilla; mix well. Stir in flour mixture.
Beat egg whites until they form stiff peaks. Fold into batter. Bake in a waffle iron following manufacturers directions.

Makes 4 large waffles.

Sweet Version of �Herman�

2 C milk
2 C flour
1 C sugar
2 pkg dry yeast

Combine ingredients in a nonmetallic bowl and place in a warm place � let it work for 5 days, stirring it once a day.

When 5 days have passed, stir in:
2 C flour
2 C milk
1 C sugar

�Herman� can be kept in the refrigerator, and it must be stirred daily. On the 10th day, �Herman� is ready to make into coffee cake,pancakes, bread or whatever you desire. After taking out the 2 C of �Herman� for whatever you choose to make, and sharing another cup with someone, you must again feed �Herman� with

2 C flour
2 C milk
1 C sugar

And wait five days before making your next sweet tooth product. For a smaller batch, use just half of these ingredients.

Less-sweet Version of �Herman�

2 C flour
2 C water
1/4 C sugar
1 pkg dry yeast

Let stand overnight in a warm place (80�) and after stirring the next morning, refrigerate, but stir each day for 5 days. Then feed �Herman�:
 
1 C flour
1/2 C sugar
1 C milk

Stir thoroughly and refrigerate it for 5 more days, stirring each day. �Herman� is ready for baking on the 10th day. Take out 2 or 3 cups, then feed �Herman� again with:

1 C flour
1 C milk
1/2 C sugar

If you cannot remove the 2 or 3 cups of starter on the 10th day, then add 1 teaspoon sugar and repeat this sugar addition every 10 days until ready to use the starter.
