Lemon Blueberry Cloud
1 C. prepared lemon curd (see note)
1/8 t. ground mace
1 C. heavy cream, chilled
2 C. fresh blueberries
Grate 2 teaspoons of the lemon peel and squeeze out 1 tablespoon of lemon juice. In a medium bowl, gently stir together the lemon peel, lemon juice, lemon curd and mace. In a mixing bowl, whip the cream until it's just barely stiff. Fold three-fourths of the whipped cream into the lemon curd mixture, then fold in all by -1/4 cup of the blueberries.
Spoon the lemon mousse into six attractive, stemmed glasses, such as Champagne flutes or martini glasses.
Garnish each with a dollop of the remaining whipped cream, then sprinkle with the reserved berries. Serve immediately, or refrigerate for up to 1 hour before serving.
Note: Lemon curd is an intensely lemony, creamy mixture made from lemon juice, sugar, butter and egg yolks cooked together until they're very thick and smooth. It's available commercially in the better-stocked grocery stores and some gourmet shops.
