Christmas Cake
1 1/2 pounds salted, mixed nuts, no peanuts
1/2 pound pitted dates
4 oz. green cherries
4 oz. red cherries
1/2 c. white raisins
1 can (398 ml) pineapple tidbits
4 oz. candied orange peel
8 oz. candied mixed peel
Mix fruit.
Sift together:
3/4 c. flour
3/4 c. sugar
1/2 tsp. baking powder
Pour flour over fruit, mix well.
Beat well:
3 eggs
1 tsp. vanilla
Add to floured fruit mixture and stir well. Line 2 loaf pans with
greased brown paper, fill with batter. Bake 300* for 1 1/2 hours. |
