Lemon Glazed Gingerbread Recipe

Lemon Glazed Gingerbread
2 c. all purpose flour
1 c. firmly packed light brown sugar
1/2 c. melted butter
1/2 c. vegetable oil
1 c. molasses
1 c. buttermilk
1 t. vanilla
4 t. cinnamon
2 t. ginger
1 t. nutmeg
1 t. baking soda
1 t. salt
3 c. powdered sugar
2 T. melted butter
1/4 c. fresh lemon juice
1 T. grated lemon peel
Preheat oven to 325. Combine all ingredients except glaze in mixing
bowl and beat 2 min. at medium speed. Pour batter into greased and
floured 9x13-inch pan.
Bake 40 to 50 min. or until top of cake springs
back when lightly touched. Remove from oven and let cool completely.
Spread with lemon glaze.
Glaze- Blend all ingredients until smooth and
creamy. If glaze is too thick, dilute with a little milk.
